The benefits of healthy eating are these days being given more attention than ever before and there are a number of reasons for doing this. Poor diet is a contributing factor in diseases such as heart disease and high blood pressure which can put a drain on the economy. No matter where you look, people are encouraging you to live a more healthy way of life but but then, you are also being encouraged to rely on fast foods that can affect your health in a terrible way. Most likely, a lot of people believe that it takes a great deal of work to eat healthily and that they will have to drastically alter their way of life. In reality, however, simply making some minor changes can positively impact day-to-day eating habits.
These better food options can be applied to other foods such as your cooking oils. Olive oil is a monounsaturated fat which can help to lower bad cholesterol. It can also be good for your skin as it is an excellent source of vitamin E. Looking for a local supplier of fresh fruits and veggies will give you the choice of consuming foods that still have most of the nutrients which are typically lost when produce has been kept in storage before it is sold.

Instructions to make Greek Style Quinoa Salad:
- Chop and place all of your veggies in a large bowl. I'm not a fan of olives, so I generally leave them out.
- Stir in the cooked quinoa and the drained and rinsed chickpeas.
- Whisk together all of the dressing ingredients.
- Pour the dressing over the quinoa and veggies and toss to evenly coat.
- That's it! I would recommend letting this chill for a couple of hours before eating, so the flavors have time to steep together. Store this in a large airtight container in the fridge. Or if meal prepping, go ahead and portion out the salad evenly into 6 individual sized containers.
- Serve it up with some feta cheese sprinkled over the top.
