The ingredients needed to make Caramelized Carrots:
  1. Use 1/2 c hazelnuts,chopped
  2. Provide 3 lbs small carrots, peeled
  3. You need 1 garlic clove, very thinly sliced
  4. Provide 1/2 tsp ground ginger
  5. Take 1/2 tsp smoked paprika
  6. Provide 2 T plus 1 tsp olive oil
  7. Get 1/2 salt1/4 tsp black pepper
  8. Use 1/4 c packed fresh flat-leafed parsley, chopped

  1. Preheat oven to 350°F.
  2. Place nuts on a baking sheet and roast 10-12 min. Remove nuts and set aside to cool.
  3. In same pan, toss carrots with garlic, ginger, paprika, 2 T oil, salt and pepper. Cover pan tightly and roast 30 min. Uncover and roast another 20-25 min, until tender.
