- Prepare 4 Fish fillets, any fish works. I've used salmon, cod, trout,bluegill, tilapia, but anything will work.
- You need 5 Strips of bacon
- You need 1 Onion
- Use 2 medium sized potatoes

- Take 1 cup Heavy cream

- Cube the fish into about 1"
- Pour the water into a saucepan and add about 1/3 of the fish cubes. Boil for about 10 minuts
- Brown the bacon, and onion,when crispy cube and add the potato. Brown well
- Add the fish in the water to the bacon/onion/potato bring to a simmer and add the rest of the fish. Simmer for about 10 minuts
- After 10 minutes add the cream, evaporated milk, salt, pepper, and shrimp. Bring to just below a boil and com for 1 hour. Note: it is important not to let this boil your sauce will break and while it will still be tasty, visually it will get really ugly.
